Last week one of my colleagues informed us that during the heat wave he would be bringing in homemade ice-cream cake for the team. I was ecstatic and immediately decided that we need to have a meal to go with it! I decided to opt for Macaroni and Cheese – an easy comfort food! I am pleased to report that the mac and cheese (and yummy ice-cream cake) was a big hit!
- ¼ cup butter or margarine
- ¼ cup flower
- 1 cup milk
- 8 oz Velvetta pasteurized prepared cheese product – cut into ½ inch cubes
- 2 cups elbow macaroni, cooked and drained
- ½ cup shredded cheddar cheese
- Bread crumbs or crushed ritz crackers
Directions:
- Preheat oven to 350 degrees
- Melt 3 Tbsp butter in medium saucepan on medium heat. Whisk in flour, cook for 2 minutes stirring constantly. Gradually stir in milk and cook until mixture boils and thickens, stirring constantly. Add Velveeta, cook 3 minutes or until melted, stirring frequently. Stir in macaroni.
- Spoon into casserole dish (spray with non stick cooking spray), sprinkle with cheddar cheese, remaining butter and sprinkle cracker/bread crumbs on top
- Bake for 20 minutes or until heated
- Enjoy!!
